Our Seasonal Direction: As the nights draw in, our culinary focus shifts toward depth and contrast. We build our menus around the peak of the British autumn and winter harvest - focusing on slow, aromatic braises, fire-roasted winter squash, and premium, locally sourced meats, all cut through with our trademark Australasian brightness.
Elite Pedigree: Led by Melanie Brown alongside award-winning wine profiles curated by our in-house Sommelier, we combine honest cooking with the seamless polish of elite hospitality. We use raw elements to anchor events in a sense of occasion, creating generous, high-energy dining moments.
Beyond the Restaurant: We partner exclusively with independent producers, fishermen, and growers who share our obsession with sustainability, low-impact sourcing, and uncompromising quality. We are just as comfortable navigating the logistics of historic, stately venues as we are cooking over open embers in the wild.
